docs: update README and SESSION_CONTEXT for completed WebRTC implementation

Updated documentation to reflect Phase 2.5 completion:
- Moved WebRTC from 'Next Up' to 'Implemented' features
- Added WebRTC to tech stack
- Updated test flow with real WebRTC details
- Marked Phase 2.5 as COMPLETED in roadmap
- Updated progress to ~78% overall
- Updated SESSION_CONTEXT.md current status and missing features
